Five plates will be served to two or four guests during the course of this meal. The tasting menu includes:

Course one: homemade pork scratching with a Cox’s apple sauce

Course two: smoked-ham hock with comfit chicken terrine, homemade piccalilli, and sough dough toast

Course three: gin-cured salmon with pickled cucumber, orange and fennel salad, and avocado sorbet | curried south-coast mussels, lemon grass and ginger, and toasted garlic crostini

Course four: roast rump of Sussex beef with spitfire braised blade, spinach, creamed potato puree, and old dairy ale gravy | glazed fillet of hake with smoked haddock and apple wood cheddar croquette, glazed carrots, and chive butter sauce

Dessert: summer berry crumble soufflé, macerated summer berries, and vanilla-bean ice cream | dark chocolate and guinness tart, honey-comb ice cream, and chocolate tuile
